Ocean Pool Gin from Bondi Liquor Co is a bright, coastal-leaning Australian gin bottled at 700mL, made in small batches by a Sydney distillery that began in Bondi in 2020. Juniper stays in charge, but it is framed by citrus lift and a clean saline edge rather than heavy spice.

The nose opens sharp and fresh: pine and crushed juniper berry first, then lemon and grapefruit zest, a green herbal note somewhere between rosemary and sea parsley, and a faint mineral tang like air off the rock shelf. On the palate the citrus carries through, with a peppery flicker mid-way and a soft floral sweetness underneath that keeps everything in balance.

Texture is light and quite silky for the style, with none of the oily weight some gins carry. Structure comes from juniper and a gentle root-spice grip, and the finish is dry and briny, tapering off with a cool eucalypt-and-citrus-peel echo that lingers longer than you'd expect from a gin this fresh.
